Egg Noodles

The truth is my daughter doesn't like my food. Not at all... unless i bake a bread. It's my fault because when she's baby I gave her Heinz products instead of home made food. So,it's all my fault and i'm keep on praying that one day she want to eat some of my food.
Kirana is big fan of noodle, so i try to make home made noodle for her. Keep trying,Mom!




Ingredient:
300 gr strong flour
3 eggs
1 tbsp vegetable oil
a pinch of salt


Method:

  1. In the table, combine the flour and salt and make a well in the centre.
  2. Add the eggs and oil and gradually work in with a spoon until a dough forms. 
  3. Tip the dough out onto the bench and chop together, then knead for 5-10 minutes until the dough is smooth. 
  4. Cover with cling wrap and rest for 30 minutes.
  5. Roll the dough out with a rolling pin and book fold. 
  6. Pass the dough through the pasta machine, gradually increasing the gauge until you get to 3.
  7. Book fold the dough again, and again pass through the machine. 
  8. Repeat this process until the dough is smooth and has lost its rough edges.
  9. Roll the pasta through the 6th setting, then through the fine noodle cutter. Hang to dry.
  10. Blanch the noodles in plenty of boiling salted water until al dente. Drain well and set aside.

Mie Ayam Jamur


Ingredients:
Egg Noodles (or any noodle that i can find in Cork)

2 tbsp Sesame Oil
2 chicken fillets (original recipe is 300 gr)
200 gr irish wild mushrooms, quartered
5 cloves garlic, minced ( i love garlic! original recipe is only 4)
1 cm ginger, bruised (original recipe is 3cm but i don't really like the taste of ginger)
2 tbsp light soy sauce
3 tbsp kecap manis (original recipe is 1 tbsp,but i prefer sweeter)
1 tbsp oyster sauce
400 ml chicken broth
1 tsp grounded peppercorn
1 tbsp tapioca starch diluted in 25 ml water

Chicken Broth:
3 can of Chicken Stock Pot
1 L water
1 cm ginger,sliced
3 cloves garlic, minced
white peppercorns
salt

Directions:

Stir Fry Chicken Mushroom:
1. Combine 1 tbsp mushroom soy sauce, chicken pieces and ground white pepper; stir well. Add 1 tbsp tapioca starch and mix well. Set aside.
2. Stir fry garlics and ginger with the hot sesame oil until fragrant. Add seasoned chicken pieces. Stir frequently to let the aroma of ginger and garlic stick to chicken and cook until chicken changes colour.
3. Add mushrooms, the rest of mushroom soy sauce, kecap manis, broth/water, salt and peppercorns. Cook until seasoning is absorbed and chicken is cooked. Set aside. There might be a small amount of broth left in the cooking, so we can use up for assembling the noodles later on (I prefer to have more sauce as i don't like dry noodles).

Chicken Broth:
In a large pan, add water and bring to a boil. Add all other ingredients. Cook at high heat and reboil. If you have bakso or siomay, you can add it.

How to Assemble and Serve 1 Portion of Chicken Mushroom Noodle:
1. Prepare two bowls; one is big and another one is smaller size.
2.
Place broth in a small bowl.
3. In a big bowl, combine 1 tbsp sesame oil, 2.5 tbp light soy sauce and a dash of ground white pepper. Add 1 portion cooked noodle and mix well. Place stir fry chicken mushroom. Sprinkle with green onions.

Mie Tek Tek

Bahan:
250 gr mi telur kering
2 sdm minyak untuk menumis
350 ml kaldu ayam
1 btr telur, kocok lepas
2 bh tomat, potong-potong
100 gr sawi putih, potong-potong
75 gr kol, potong-potong
1 bh cabai merah besar, potong-potong
1 sdm saus sambal
1 sdt garam
¼ sdt gula pasir
½ sdt lada bubuk
4 siung bawang putih, cincang halus
4 bh bawang merah, cincang halus

Cara Membuat:
1. Tumis bawang merah dan bawang putih sampai harum. Masukkan telur, aduk-aduk hingga berbutir-butir dan matang.
2. Tambahkan sawi putih, kol, tomat, dan cabai iris, aduk hingga layu.
3. Masukkan kaldu ayam, garam, gula, dan lada. Aduk sambil tambahkan saus sambal.
4. Setelah bumbu matang, masukkan mi telur. Masak sampai mi lunak dan bumbu meresap. Angkat dan hidangkan dengan taburan bawang goreng.

Untuk 2 orang

Tips:
• Tumis bawang merah dan bawang putih hingga benar-benar matang agar kuah tidak terasa langu (kurang matang).

Pad Thai

Bahan:

4 sdm minyak untuk menumis
2 siung bawang putih, iris halus
8 bh bawang merah, iris halus
1 sdm udang kering, rendam air panas
4 btr telur, kocok lepas
200 gr tahu takwa, potong
1x1 cm
400 gr udang ukuran sedang, kupas kulitnya, sisakan ekornya
300 gr
crab stick rendam dengan air hangat
4 sdm kacang tanah, kupas, tumbuk kasar
1 sdt cabai merah kering bubuk
150 gr taoge, buang akarnya
1 btg daun bawang ambil bagian yang putihnya, iris tipis
30 gr kucai, iris 3 cm

Saus (aduk rata):

1 sdm asam jawa
2 sdm air jeruk nipis
3 sdm gula pasir
½ sdt garam
3 sdm kecap ikan
2 sdm kecap asin

Taburan:

50 gr kacang tanah sangrai tumbuk kasar
jeruk nipis
daun ketumbar

Cara membuat:

1. Panaskan minyak, tumis bawang putih, bawang merah hingga harum. Masukkan udang kering tumis sebentar hingga beraroma. Masukkan telur, buat orak-arik.
2. Tambahkan tahu dan udang, masak hingga tahu matang dan udang berubah warna.
3. Tuangi campuran saus. Masukkan
crab stick, aduk rata. Tambahkan kacang tanah, cabai merah kering, taoge, daun bawang dan kucai. Aduk cepat, jaga jangan sampai taoge layu. Angkat.
4. Taruh dalam piring saji, taburi dengan bahan taburan dan perciki air jeruk nipis. Sajikan.
